Fisherman's Sandwich
Smoked trout is a nice local alternative and often more affordable than smoked salmon. Use it here in a sandwich and enjoy the perfect blend of dill, capers, cream cheese and lemon.

                              Ingredients
- 2 slices Bon Matin™ No Fat, No Sugar Added 100% Whole Wheat Bread
 - 2 tsp (30 mL) of cream cheese, softened
 - Drizzle of lemon juice
 - Freshly ground pepper, to taste
 - 8 baby spinach leaves
 - 75 g (2 1/2 oz) of sliced smoked trout
 - 1 tbsp (15 mL) of red onion, minced
 - 1 tsp (5 mL) of capers, drained
 - 1 tsp (5 mL) of dill sprigs
 - Zest of 1/2 lemon
 - 2 tbsp of olive oil
 
Preparation
- Toast the bread.
 - While the bread is toasting, mix the cream cheese, pepper and lemon juice.
 - Spread the cream cheese mixture on the bread.
 - Arrange the spinach leaves on top.
 - Add the slices of smoked trout.
 - Garnish with the red onion, capers, dill, lemon zest and olive oil.
 - Top with bread and enjoy.
