  • 2 slices Bon Matin™ La mie de l’artisan™ 12 Grain Bread
  • 1 1/2 tbsp (22.5 mL) of butter
  • 1 tbsp (15 mL) of vegetable oil
  • 8 oz of mushrooms
  • Meaux mustard to taste or old-fashioned mustard
  • 1/2 cup (125 mL) of strong cheddar grated
  • 1 small branch of fresh thyme
  • Salt and pepper


  1. Preheat your oven to 400°F (200°C).
  2. Wash the mushrooms to remove as much soil as possible.
  3. Remove the feet and put them in the compost or save them for a soup.
  4. Cut the heads of the mushrooms into slices.
  5. Heat 1 tbsp of butter and oil in a frying pan.
  6. Add the mushrooms, salt and pepper.
  7. Cook them 3 to 5 minutes or until they're golden brown.
  8. Meanwhile, spread the rest of the butter over the two bread slices.
  9. Spread with mustard to taste.
  10. Place 3/4 of the mushrooms on the bread slices.
  11. Removes the leaves from the thyme branches
  12. Sprinkle with cheese and thyme.
  13. Place the rest of the mushrooms on top.
  14. Bake the sandwich on a baking sheet on the center of the oven for 8 minutes.
  15. Set the oven to Broil and grill the cheese for a few minutes.
  16. Watch out so that it doesn't burn.
