Prosciutto and Roasted Red Pepper Sandwich

Ingredients

  • 4 slices Bon Matin™La mie de l’artisan™ Country Grains Bread (toasted if desired)
  • 1/2 cup (125 mL) of mayonnaise, homemade or store-bought
  • 1 garlic clove, minced
  • 1 small green onion, finely minced
  • 1/2 tsp (2.5 mL) of harissa
  • 1 tsp (5 mL) of sweet paprika
  • 10 slices of prosciutto
  • 2 grilled red peppers, homemade or store-bought, cut in half ( marinated eggplant or artichokes )
  • 1/2 cup (125 mL) of shredded Asiago cheese (cheddar, gruyere, Quebec cheese )
  • 4 romaine lettuce leaves
  • 2 tbsp (30 mL) of butter, softened

Preparation

  1. Preheat a grill or flat-bottomed skillet over medium heat.
  2. In a bowl, combine all spicy mayo ingredients.
  3. Spread mayo on two bread slices.
  4. Place the Asiago cheese on one slice.
  5. Add the prosciutto, romaine leaves, and red pepper.
  6. Sprinkle with remaining cheese.
  7. Top sandwiches with remaining bread slices.
  8. Butter the top faces of the sandwiches and place them, butter side down, into the skillet.
  9. Grill for 2 to 3 minutes.
  10. Butter the top faces of the sandwiches again before flipping them over in the skillet.
  11. Serve hot and enjoy!
