Crunchy Green Sandwich with Onion Chutney and Creamy Basil Dressing

This sandwich offers a perfect blend of flavors, textures and colors thanks to the crispness of the green apple, the sweet and tangy taste of the onion chutney, the fresh tomatoes and the basil vinaigrette.

Ingredients

  • 4 slices Bon Matin™ No Fat, No Sugar Added 100% Whole Wheat Bread
  • 1 green apple, cut in slices
  • 1 avocado, cut in slices
  • 1 Italian tomato, cut in slices
  • 1 cup (250 mL) of alfalfa
  • 1/4 cup (60 mL) Creamy basil dressing
  • (makes: 1/2 cup (125 mL) of dressing)
  • 1/3 cup (80 mL) of basil, cut into thin strips
  • 1/4 cup (60 mL) of parsley, chopped
  • 1/4 jalapeno pepper, seeded and minced
  • Zest of one lime
  • 1/4 cup (60 mL) of mayonnaise
  • 2 tbsp (30 mL) of plain greek yogurt
  • 1 tbsp (15 mL) of water
  • Onion and mustard chutney seeds
  • (makes: 125 mL (1/2 cup) of chutney)
  • 1 tbsp (15 mL) of olive oil
  • 1 1/2 cups (375 mL) of onion, diced
  • 1 tsp (5 mL) of mustard seeds
  • 1 tbsp (15 mL) of maple syrup
  • 1/4 cup (60 mL) of rice vinegar
  • 1/4 cup (60 mL) of water
  • 1/3 cup (80 mL) of smoked Gouda, grated
  • Pepper, to taste

Preparation

  1. For the chutney, heat up the oil in a casserole on medium heat.
  2. Cook the onion and the mustard seeds for 8 minutes, or until the onions caramelize.
  3. Add the maple syrup, the vinegar and the water.
  4. Cook until the liquid has evaporated, about 12 minutes.
  5. Pepper and let cool completely before adding the smoked Gouda.
  6. Place all the dressing ingredients into an electric mixer and reduce into a smooth puree.
  7. Spread two bread slices with 2 tbsp (30 mL) of chutney, place the apple, avocado and tomatoes on top.
  8. Finish by placing the alfalfa and 2 tbsp (30 mL) of the creamy basil dressing.
  9. Close up the sandwich with another slice of bread.
