Lemon & Herb Hummus Tartine with Cucumber and Radishes

Sometimes all it takes is two slices of artisan-style bread, hummus and a few herbs to prepare a delicious meal.

Ingredients

  • 2 slices Bon Matin™ La mie de l’artisan™ 12 Grain Bread
  • 1/4 cup (60 mL) Prepared hummus
  • 1 tbsp (15 mL) Chopped tarragon
  • 1 tbsp (15 mL) Minced chives
  • 2 tsp (10 mL) Lemon Zest
  • 1 tbsp (15 mL) Lemon juice
  • Pinch Each coarse salt and fresh cracked pepper
  • 8 Slices Each, cucumber and radishes
  • 1/4 cup (60 mL) Micro sprouts
  • 2 tsp (10 mL) Extra virgin olive oil

Preparation

  1. Toast or grill bread slices.
  2. Stir together hummus, tarragon, chives and lemon zest and juice, salt and pepper until well combined.
  3. Divide hummus mixture over each slice of toast.
  4. Top with cucumber and radish slices.
  5. Sprinkle with a little more salt, pepper and the micro greens.
  6. Drizzle with olive oil and serve.
