Carrot Raisin Chicken Salad

Very simple and delicious sandwich that makes the best healthy lunch option!

Ingredients

  • 1 Pkg Maple Leaf® Natural Selections® Oven Roasted Chicken Strips, chopped
  • 1/2 Carrot, grated
  • 1/4 cup (60 mL) Raisins
  • 3 tbsp (45 mL) Mayonnaise
  • 1 tbsp (15 mL) Chopped fresh parsley (optional)
  • 2 tbsp (10 mL) Lemon juice
  • Salt and pepper
  • Lettuce
  • Slices Whole Wheat Bon Matin Bread

Directions

  1. COMBINE chicken, carrot, raisins, mayonnaise, parsley, lemon juice and salt and pepper to taste. Place a leaf of lettuce on 2 slices of bread, spread each with a scoop of filling and top with the second slice of bread.
