Carrot Raisin Chicken Salad
Very simple and delicious sandwich that makes the best healthy lunch option!
- 1 Pkg Maple Leaf® Natural Selections® Oven Roasted Chicken Strips, chopped
- 1/2 Carrot, grated
- 1/4 cup (60 mL) Raisins
- 3 tbsp (45 mL) Mayonnaise
- 1 tbsp (15 mL) Chopped fresh parsley (optional)
- 2 tbsp (10 mL) Lemon juice
- Salt and pepper
- 4 Slices Whole Wheat Bon Matin Bread
- COMBINE chicken, carrot, raisins, mayonnaise, parsley, lemon juice and salt and pepper to taste. Place a leaf of lettuce on 2 slices of bread, spread each with a scoop of filling and top with the second slice of bread.
