Beet Tartare and Avocado on Toast

Ingredients

  • 2 slices Bon Matin™ No Fat, No Sugar Added 100% Whole Wheat Bread
  • 2 beets, cooked and cut into small cubes
  • 1/4 cup red onions, finely chopped
  • 1 grapefruit, cut into small pieces
  • 1 tbsp lemon juice
  • 1/2 tsp (2 mL) maple syrup
  • 1 tsp dill
  • 1 tbsp pecans, chopped
  • 1 tsp (5 mL) olive oil
  • 1/4 cup (60 mL) goat cheese
  • 1 avocado, sliced
  • 2 eggs, sunny-side up
  • Salt and pepper to taste

Preparation

  1. Toast two slices of Bon Matin 100% Whole Wheat bread, no Fat, no sugar sdded bread.
  2. Cook eggs, sunny-side up.
  3. Mix together beets, red onion, grapefruit, lemon juice, maple syrup, pecans, dill and olive oil.
  4. Spread goat cheese on toasted bread slices.
  5. Add avocado, beet tartare and eggs.
