Ingredients

  • 4 slices Bon Matin™ No Fat, No Sugar Added Protein Loaf
  • 3 cups cooked chicken, chopped
  • 2 scallions, minced
  • 1 apple, diced
  • 1/3 cup (75 mL) dried cranberries
  • 1/4 cup (60 mL) pecans, chopped
  • 1/4 cup (60 mL) fresh mint leaves, chopped
  • 1 tsp (5 mL) lemon zest
  • 1 tsp curry powder
  • 1/3 cup (75 mL) mayonnaise
  • 1 apple, sliced
  • Your choice of greens

Preparation

  1. In a bowl, mix all the chicken salad filling ingredients and season with salt and pepper.
  2. Spread mayonnaise on the bread and add the chicken salad, apple slices and greens. Top it off with another piece of bread.
