Veggie Sandwich with Tofu, Spinach and Mushrooms

Ingredients

  • 4 slices Bon Matin™ No Fat, No Sugar Added Protein Loaf
  • 2 tbsp (30 mL) olive oil
  • 150 g sliced mushrooms
  • 1 onion, sliced
  • 2 tbsp (30 mL) balsamic vinegar
  • 20 g butter at room temperature
  • A pack of firm tofu, sliced
  • A pack of silky tofu spread
  • Some spinach leaves

Preparation

  1. In a frying pan, heat the olive oil over medium heat. Add mushrooms and onion and fry for about 5 minutes.
  2. Add the balsamic vinegar and continue cooking until the mushrooms and onion caramelize, about 15 minutes. Set aside.
  3. Grill the firm tofu slices for 10 minutes.
  4. Toast the Bon Matin Miche protéinée bread slices.
  5. Add tofu spread, tofu slices, mushrooms and spinach leaves to make a sandwich.
