Curry and Apple Chicken Salad Sandwich

Bon Matin® No Sugar, No Fat Added Protein Loaf
Ingredients
- 4 slices Bon Matin™ No Fat, No Sugar Added Protein Loaf
- 3 cups cooked chicken, chopped
- 2 scallions, minced
- 1 apple, diced
- 1/3 cup (75 mL) dried cranberries
- 1/4 cup (60 mL) pecans, chopped
- 1/4 cup (60 mL) fresh mint leaves, chopped
- 1 tsp (5 mL) lemon zest
- 1 tsp curry powder
- 1/3 cup (75 mL) mayonnaise
- 1 apple, sliced
- Your choice of greens
Preparation
- In a bowl, mix all the chicken salad filling ingredients and season with salt and pepper.
- Spread mayonnaise on the bread and add the chicken salad, apple slices and greens. Top it off with another piece of bread.
