Green Pea Soup with Curried Bread Slices

Ingredients

  • 4 slices of Bon Matin® No Fat, No Sugar Added Protein Loaf
  • 1/4 cup olive oil
  • 1 tsp curry powder
  • 3 tbsp plain yogurt
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup green peas
  • Some fresh mint leaves
  • 1 onion, chopped
  • 1 clove garlic
  • 2 tbsp olive oil
  • 4 cups vegetable broth
  • 5 cups green peas
  • 1/4 cup mint, chiselled
  • Salt and pepper

Preparation

  1. Preheat oven to 400°F (205°C)
  2. Mix the oil and curry powder in a bowl
  3. Brush the bread slices with the mixture and grill them in the oven for 10 minutes
  4. In a saucepan, soften the onion for 2-3 minutes
  5. Add the garlic and cook for 1 minute.
  6. Add the vegetable broth and bring to a boil.
  7. Add the green peas and cook for 5 minutes. Add salt, pepper and mint.
  8. Pour everything into a blender and mix until creamy consistency.
  9. Serve in a bowl and top with bread slices, yogurt, feta cheese, green peas, mint leaves and olive oil.
