Ingredients

Croutons

  • 5 slices of Bon Matin® No Sugar, No Fat Added White Bread with Whole Grains, cut into wedges
  • 2 tbsp Olive Oil
  • 1 tsp Cajun Spice Blend

  • Corn Dip

  • 3 ears of Corn
  • 3 tbsp Mayonnaise
  • 3 tbsp Cottage Cheese
  • 1 small fresh Jalapeño Pepper, seeded and chopped
  • Juice of Half a Lime
  • 1 Clove Garlic, chopped
  • 1 tsp Chili Powder
  • 1/4 cup Fresh Cilantro, coarsely chopped
  • 1/3 cup Feta Cheese, crumbled
  • Preparation

    Croutons

    1. Preheat oven to 450 °F.
    2. Mix oil and Cajun spices.
    3. Brush the pieces of bread with the mixture of oil and spices.
    4. Toast the pieces of bread in the oven for 10 minutes.
    5. Set aside.

    6. Corn Dip

      1. Grill the ears of corn on the barbecue or in a frying pan for 8 to 10 minutes, then let cool.
      2. Using a knife, remove the corn kernels from the cobs.
      3. In a bowl, mix mayonnaise, cottage cheese, lime juice, pepper, garlic, and chili powder.
      4. Add the corn, cilantro, and cheese to the bowl, then mix well.
      5. Serve with the bread croutons.
