Chickpea, Red Lentil and Carrot Creamy Soup

Ingredients

  • 4 slices Bon Matin™ 14 Grain Bread
  • 3 tbsp (45 mL) olive oil
  • 1 chopped onion
  • 1 tbsp (15 mL) chopped garlic
  • 450 g (1 lb) carrots, peeled and thinly sliced
  • 2 tsp (10 mL) curry powder
  • 1 cup (250 mL) red lentils
  • 4 cups (1 L) vegetable broth
  • Salt and pepper to taste
  • 1 tbsp (15 mL) of vegan cream
  • Herbs
  • Roasted chickpeas

Preparation

  1. In a saucepan, heat oil over medium heat. Cook onion, garlic and carrots for 2 to 3 minutes.
  2. Add the curry. Stir and cook for 30 seconds.
  3. Add lentils and broth. Bring to a boil, then simmer for 20 to 25 minutes until lentils are cooked.
  4. Transfer the mixture to the blender container. Emulsify until you obtain a smooth and creamy preparation.
  5. Distribute the soup in the bowls. Garnish each serving of the preparation with vegan cream preparation.
  6. Garnish with dry chickpeas, herbs and serve with slices of Bon Matin 14 grain bread.
