Sandwich Super Salad

Add fiber and crunch to your lunch salad by turning it into a sandwich.

MADE WITH Bon Matin® 14 Grain Bread

Ingredients

  • 8 slices Bon Matin™ 14 Grain Bread
  • 2 eggs
  • 1 small red onion
  • 1/4 cup (60 mL) red wine vinegar
  • 1/4 cup (60 mL) light mayonnaise
  • 8 lettuce leaves and Boston lettuce, each
  • 8 large tomato slices
  • 16 cucumber slices
  • 1/2 ripe avocado, sliced
  • Pinch of salt and freshly ground pepper, each
  • 1 C. (15 mL) olive oil

Preparation

  1. Boil the eggs for 10 minutes then transfer to iced water. Scale and slice.
  2. Slice the red onion and mix in a bowl with the vinegar. Set aside.
  3. Toast the slices of bread and spread with light mayonnaise.
  4. Divide lettuce and Boston lettuce leaves among four slices of toasted bread. Top with tomatoes, cucumber, red onion, avocado and egg slices.
  5. Season with salt and pepper and top with remaining bread slices to make sandwiches.
