Simple Spirals with Cream Cheese and Herbs and Cucumber

They are easy to prepare in advance. The trick is to flatten the bread so that the spirals are easy to form.

  • 8 slices of Bon Matin™ 14 Grain Bread
  • 1/2 cup (125 mL) light cream cheese spread
  • 4 radishes, finely chopped
  • 2 tbsp (30 mL) chives and dill, each
  • 1 tbsp (15 mL) lemon zest
  • 2 tbsp (30 mL) lemon juice
  • Pinch of salt and freshly ground pepper each
  • 1/4 English cucumber, thinly sliced


  1. In a bowl, mix together cream cheese, radishes, chives, dill, lemon zest and juice, salt and pepper. Mix well.
  2. Flatten each slice of bread with a rolling pin, a large can or a heavy glass container.
  3. Spread about 2 tbsp (30 mL) of the cream cheese mixture on each flattened bread slice, leaving a 1/4-inch border.
  4. Top with cucumber slices.
  5. Roll each spreaded bread slice like a jelly roll. Wrap in plastic wrap to maintain shape.
  6. Using a serrated knife, slice into 1-inch pieces and serve.
