Guacamole with Coriander Toast Triangles

Bon Matin® No Sugar, No Fat Added 100% Whole Wheat Bread
Ingredients
- 6 slices Bon Matin™ No Fat, No Sugar Added 100% Whole Wheat Bread
- 3 avocados
- Juice of 1 lime
- 1 tomato, diced
- 1 scallion, minced
- 1/4 cup (60 mL) fresh cilantro
- 1 tsp jalapeno pepper, finely chopped
- 1 clove garlic, minced
- 1/2 tsp salt
- 3 tbsp (45 mL) olive oil
- 1 tsp ground coriander
Preparation
- Preheat the oven to 350°F (180°C).
- In a bowl, mix the olive oil and ground coriander.
- Brush each side of the bread slices with olive oil and cut them into triangles.
- Bake in the oven for 8 minutes, flipping them halfway, until the bread is nicely toasted.
- Cut the avocados and scoop out the flesh.
- In a bowl, mash the avocados with the lime juice.
- Stir in the other ingredients.
- Serve with Coriander Toast Triangles.
