Savoury Toast with Cottage Cheese, Poached Egg and Caramelized Tomatoes

Ingredients

  • 4 slices Bon Matin™ Smooth Multigrain Bread
  • 4 eggs
  • 1/4 cup (60 mL) white vinegar
  • 2 tsp (10 mL) garlic powder
  • 2 tsp (10 mL) mustard powder
  • 1 tsp (5 mL) parsley
  • 2 tbsp (30 mL) olive oil
  • 1/2 cup cherry tomatoes cut in half
  • 1 cup cottage cheese
  • Salt and pepper to taste

Preparation

  1. Bring a pot of water to a boil and add the white vinegar.
  2. Add the eggs to the saucepan and cook for 7 minutes to make poached eggs.
  3. In a salad bowl, pour the olive oil, garlic powder, mustard powder and chopped cherry tomatoes. Season with salt and pepper and mix well.
  4. In a frying pan, sauté the tomato mixture for 2 to 3 minutes.
  5. Spread cottage cheese on the bread slices. Place the tomato mixture and poached eggs on top.
  6. Sprinkle with parsley.
