Savoury Toast with Cottage Cheese, Poached Egg and Caramelized Tomatoes

Ingredients
- 4 slices Bon Matin™ Smooth Multigrain Bread
- 4 eggs
- 1/4 cup (60 mL) white vinegar
- 2 tsp (10 mL) garlic powder
- 2 tsp (10 mL) mustard powder
- 1 tsp (5 mL) parsley
- 2 tbsp (30 mL) olive oil
- 1/2 cup cherry tomatoes cut in half
- 1 cup cottage cheese
- Salt and pepper to taste
Preparation
- Bring a pot of water to a boil and add the white vinegar.
- Add the eggs to the saucepan and cook for 7 minutes to make poached eggs.
- In a salad bowl, pour the olive oil, garlic powder, mustard powder and chopped cherry tomatoes. Season with salt and pepper and mix well.
- In a frying pan, sauté the tomato mixture for 2 to 3 minutes.
- Spread cottage cheese on the bread slices. Place the tomato mixture and poached eggs on top.
- Sprinkle with parsley.
