Guacamole with Coriander Toast Triangles

Ingredients

  • 6 slices Bon Matin™ No Fat, No Sugar Added 100% Whole Wheat Bread
  • 3 avocados
  • Juice of 1 lime
  • 1 tomato, diced
  • 1 scallion, minced
  • 1/4 cup (60 mL) fresh cilantro
  • 1 tsp jalapeno pepper, finely chopped
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 3 tbsp (45 mL) olive oil
  • 1 tsp ground coriander

Preparation

  1. Preheat the oven to 350°F (180°C).
  2. In a bowl, mix the olive oil and ground coriander.
  3. Brush each side of the bread slices with olive oil and cut them into triangles.
  4. Bake in the oven for 8 minutes, flipping them halfway, until the bread is nicely toasted.
  5. Cut the avocados and scoop out the flesh.
  6. In a bowl, mash the avocados with the lime juice.
  7. Stir in the other ingredients.
  8. Serve with Coriander Toast Triangles.
