Bon Matin® Plus Quinoa + Vitamin D Bread
Ingredients
- 2 slices Bon Matin® + Quinoa x Vitamin D Bread
- 2 eggs
- 1 tbsp (15 ml) milk
- 1/4 tsp (1 ml) salt
- 1/4 tsp (1 mL) black pepper
- 1 tbsp (15 ml) unsalted butter
- 1 slice Cheddar cheese
- 1/4 cup (60 ml) packed fresh baby spinach
- 2 slices of tomato
- 2 slices Black Forest ham
Preparation
- In a small bowl, whisk together eggs, milk, salt and pepper.
- In a medium skillet set over medium heat, melt butter. Pour in egg mixture. Immediately add the bread slices and flip to coat, arranging them end to end on the egg mixture and creating a French toast–like coating.
- Cook for 1 to 2 minutes or until eggs are set and start to brown. Carefully flip eggs and bread. Fold in excess cooked egg mixture onto the bread.
- Top one of the bread slices with Cheddar, spinach, tomato and ham. Flip the other bread slice onto the toppings to create a sandwich. Slide onto plate.
Tip: Mix up your toppings as desired. Try with turkey slices or crispy bacon, Swiss or mozzarella cheese, baby arugula or romaine.
