Toast with Asparagus, Eggs, and Feta Cheese

Ingredients
- 2 slices of Bon Matin® La mie de l'artisan™ Oatmeal Bread
- 4 Eggs
- 10 Asparagus Spears
- 1/4 cup Feta Cheese, crumbled
- 2 tsp Fresh Dill, chopped
- A few strands of Chives, chopped
- 2 tbsp Olive Oil
- Salt and Pepper, to taste
Preparation
- Prepare the asparagus by cutting the bottom of the stem.
- Place the asparagus in a frying pan and pour in 1 tsp of olive oil. Add salt and pepper to taste. Grill 5 to 8 minutes and set aside.
- In a bowl, beat the eggs and add the feta cheese, dill, salt and pepper.
- In a frying pan, heat 1 tsp olive oil over medium heat and add the egg mixture. Cook while stirring for about 5 minutes.
- Toast the bread slices in the toaster.
- Place the mixture on the grilled slices and top with asparagus and chives.
