Toast with Asparagus, Eggs, and Feta Cheese

Ingredients

  • 2 slices of Bon Matin® La mie de l'artisan™ Oatmeal Bread
  • 4 Eggs
  • 10 Asparagus Spears
  • 1/4 cup Feta Cheese, crumbled
  • 2 tsp Fresh Dill, chopped
  • A few strands of Chives, chopped
  • 2 tbsp Olive Oil
  • Salt and Pepper, to taste

Preparation

  1. Prepare the asparagus by cutting the bottom of the stem.
  2. Place the asparagus in a frying pan and pour in 1 tsp of olive oil. Add salt and pepper to taste. Grill 5 to 8 minutes and set aside.
  3. In a bowl, beat the eggs and add the feta cheese, dill, salt and pepper.
  4. In a frying pan, heat 1 tsp olive oil over medium heat and add the egg mixture. Cook while stirring for about 5 minutes.
  5. Toast the bread slices in the toaster.
  6. Place the mixture on the grilled slices and top with asparagus and chives.
