Lemon & Herb Hummus Tartine with Cucumber and Radishes

Ingredients
- 2 slices Bon Matin™ La mie de l’artisan™ 12 Grain Bread
- 1/4 cup (60 mL) Prepared hummus
- 1 tbsp (15 mL) Chopped tarragon
- 1 tbsp (15 mL) Minced chives
- 2 tsp (10 mL) Lemon Zest
- 1 tbsp (15 mL) Lemon juice
- Pinch Each coarse salt and fresh cracked pepper
- 8 Slices Each, cucumber and radishes
- 1/4 cup (60 mL) Micro sprouts
- 2 tsp (10 mL) Extra virgin olive oil
Preparation
- Toast or grill bread slices.
- Stir together hummus, tarragon, chives and lemon zest and juice, salt and pepper until well combined.
- Divide hummus mixture over each slice of toast.
- Top with cucumber and radish slices.
- Sprinkle with a little more salt, pepper and the micro greens.
- Drizzle with olive oil and serve.
