French Toast Casserole with Raspberries and Almonds

Ingredients

  • 8 cups of Bon Matin™ La mie de l’artisan™ Oatmeal Bread, cut into cubes
  • 4 eggs
  • 1 ½ cups almond milk
  • 1/2 cup maple syrup
  • 1 tsp almond extract
  • 1 tsp ground cinnamon
  • 2 cups fresh or frozen raspberries
  • 1/4 cup sliced almonds
  • 1 tsp icing sugar

Preparation

  1. In a bowl, whisk the eggs, milk, maple syrup, almond extract and cinnamon.
  2. Add the bread cubes and coat them well with the mixture.
  3. Let stand for 1 hour in the fridge.
  4. Preheat oven to 375°F.
  5. Butter a baking dish.
  6. Take the mixture out of the fridge and add the raspberries. Mix gently and pour the contents into the baking dish.
  7. Bake for 50 minutes or until golden brown.
  8. Sprinkle with icing sugar and sliced almonds.
