Bon Matin® 14 Grain Bread
Ingredients
- 8 slices Bon Matin™ 14 Grain Bread
- 2 eggs
- 1 small red onion
- 1/4 cup (60 mL) red wine vinegar
- 1/4 cup (60 mL) light mayonnaise
- 8 lettuce leaves and Boston lettuce, each
- 8 large tomato slices
- 16 cucumber slices
- 1/2 ripe avocado, sliced
- Pinch of salt and freshly ground pepper, each
- 1 C. (15 mL) olive oil
Preparation
- Boil the eggs for 10 minutes then transfer to iced water. Scale and slice.
- Slice the red onion and mix in a bowl with the vinegar. Set aside.
- Toast the slices of bread and spread with light mayonnaise.
- Divide lettuce and Boston lettuce leaves among four slices of toasted bread. Top with tomatoes, cucumber, red onion, avocado and egg slices.
- Season with salt and pepper and top with remaining bread slices to make sandwiches.
