Veggie Sandwich with Tofu, Spinach and Mushrooms

                              Ingredients
- 4 slices Bon Matin™ No Fat, No Sugar Added Protein Loaf
 - 2 tbsp (30 mL) olive oil
 - 150 g sliced mushrooms
 - 1 onion, sliced
 - 2 tbsp (30 mL) balsamic vinegar
 - 20 g butter at room temperature
 - A pack of firm tofu, sliced
 - A pack of silky tofu spread
 - Some spinach leaves
 
Preparation
- In a frying pan, heat the olive oil over medium heat. Add mushrooms and onion and fry for about 5 minutes.
 - Add the balsamic vinegar and continue cooking until the mushrooms and onion caramelize, about 15 minutes. Set aside.
 - Grill the firm tofu slices for 10 minutes.
 - Toast the Bon Matin Miche protéinée bread slices.
 - Add tofu spread, tofu slices, mushrooms and spinach leaves to make a sandwich.
