French Toast with Red Berry Compote

  • 6 slices Bon Matin™ No Fat, No Sugar Added Seed Lovers Bread
  • 1 pinch of cinnamon
  • 2 eggs
  • 2/3 cup (160 mL) milk
  • 1 pinch nutmeg
  • Butter for cooking
  • 250 g of red berries
  • 2 tbsp (30 mL) of maple syrup


  1. In a saucepan, bring the red berries and maple syrup to a boil.
  2. Add a little bit of water if the compote sticks to the bottom of the saucepan.
  3. Simmer 15 minutes over medium heat, stirring.
  4. Mix the preparation and let it cool before serving.
  5. Beat the eggs and add the milk, cinnamon and nutmeg.
  6. Dip the bread in the egg mixture to coat it well.
  7. Heat the butter in a frying pan and brown the bread slices on both sides.
  8. Serve the French toast with the red berry compote and plain yogurt.
  9. Top with grated coconut and your choice of fruits.
