Ingredients
- 2 slices Bon Matin™ No Fat, No Sugar Added 100% Whole Wheat Bread
- 2 beets, cooked and cut into small cubes
- 1/4 cup red onions, finely chopped
- 1 grapefruit, cut into small pieces
- 1 tbsp lemon juice
- 1/2 tsp (2 mL) maple syrup
- 1 tsp dill
- 1 tbsp pecans, chopped
- 1 tsp (5 mL) olive oil
- 1/4 cup (60 mL) goat cheese
- 1 avocado, sliced
- 2 eggs, sunny-side up
- Salt and pepper to taste
Preparation
- Toast two slices of Bon Matin 100% Whole Wheat bread, no Fat, no sugar sdded bread.
- Cook eggs, sunny-side up.
- Mix together beets, red onion, grapefruit, lemon juice, maple syrup, pecans, dill and olive oil.
- Spread goat cheese on toasted bread slices.
- Add avocado, beet tartare and eggs.
