Ingredients

  • 4 slices of Bon Matin® No Fat, No Sugar Added Seed Lovers Bread
  • 1 Lebanese cucumber, cut into ribbons
  • 4 slices of cheddar cheese
  • 1 avocado, sliced
  • Radish shoots
  • 1 can of chickpeas, rinsed and drained
  • 1/2 cup tahini
  • 2 cups beets, cooked and diced
  • 1 clove garlic, chopped
  • 1/4 cup lemon juice
  • 1 tsp salt
  • 1 tsp cumin powder
  • 1 tbsp olive oil
  • 1/4 cup water

Preparation

  1. Put all the ingredients for the beet hummus in the food processor and reduce to a purée
  2. Top the bread slices with two 2 tbsp of hummus, cucumbers, avocado, cheese and radish shoots
  3. Close to form a sandwich
