Barbecue Chicken Grilled Cheese

Ingredients

  • 4 slices of Bon Matin® No Sugar, No Fat Added White Bread with Whole Grains
  • 1 tsp olive oil
  • 1 small red onion, chopped
  • 1 cup cooked chicken, shredded
  • 1/2 tsp paprika
  • 1/4 cup barbecue sauce of your choice
  • 2 tbsp fresh coriander, chopped
  • 1 cup grated cheddar cheese
  • 2 tsp butter

Preparation

  1. Heat the oil in a skillet over medium heat, add the onion and cook for 10 minutes.
  2. Add the chicken, paprika and barbecue sauce. Mix well.
  3. Remove from heat and add the cilantro.
  4. Heat another skillet over medium-high heat.
  5. Butter one side of each slice of bread.
  6. Place 2 slices in the pan, buttered side facing down.
  7. Divide the cheese and chicken mixture onto the slices.
  8. Top with the remaining slices and cook for 3 to 5 minutes on each side, until the cheese is melted.
  9. Serve.
