Tomato and basil bruschetta

Ingredients

  • 6 slices Bon Matin™ 14 Grain Bread
  • 3 tbsp (45 mL) olive oil
  • 4 tomatoes (2 red and 2 yellow), finely diced *remove seeds
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1/2 clove of garlic, crushed and finely chopped
  • 1/4 cup olive oil
  • 1 tbsp (15 mL) balsamic vinegar

Preparation

  1. Brush bread slices with oil and toast in the oven for 10 min at 425˚F, then cut into quarters and set aside
  2. In a bowl, mix all the ingredients for the bruschetta
  3. Serve on the slices of bread
