Ingredients
- 4 slices of Bon Matin® No Fat, No Sugar Added Seed Lovers Bread
- 1 Lebanese cucumber, cut into ribbons
- 4 slices of cheddar cheese
- 1 avocado, sliced
- Radish shoots
- 1 can of chickpeas, rinsed and drained
- 1/2 cup tahini
- 2 cups beets, cooked and diced
- 1 clove garlic, chopped
- 1/4 cup lemon juice
- 1 tsp salt
- 1 tsp cumin powder
- 1 tbsp olive oil
- 1/4 cup water
Preparation
- Put all the ingredients for the beet hummus in the food processor and reduce to a purée
- Top the bread slices with two 2 tbsp of hummus, cucumbers, avocado, cheese and radish shoots
- Close to form a sandwich
