Strawberry, Watermelon and Cucumber Salad with Fresh Herb Croutons

Bon Matin® Smooth Multigrain Bread
Ingredients
- 4 slices Bon Matin™ Smooth Multigrain Bread
- 2 tbsp (30 mL) olive oil
- 1/4 cup chives, dill, thyme, freshly chopped
- 1 tbsp (15 mL) grated parmesan cheese
- 2 cups arugula
- 1 cup strawberries, sliced
- 1 cup watermelon, cut into cubes
- 1 cup cucumbers, sliced
- 3 tbsp (45 mL) fresh mint, chopped
- 3 tbsp (45 mL) pecans, in pieces
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tbsp (30 mL) rice vinegar
- 1 tsp (5 mL) maple syrup
- 1 clove of garlic
- 1/2 tsp (2.5 mL) Dijon mustard
Preparation
- Preheat BBQ to 425°F
- Mix oil with herbs and cheese and brush it on bread slices
- Then cut the slices into cubes
- Place on a baking sheet and bake in the oven for 10 to 15 minutes *watch often so they don't burn and set aside
- Combine all ingredients and mix well with a small whisk
- In a large bowl, toss all salad ingredients together with dressing and serve with herb croutons
