Strawberry Matcha French Toast

Ingredients

  • 4 slices Bon Matin® + Super Grains x Fibre
  • 1/2 cup (125 ml) cottage cheese, divided
  • 1/3 cup (75 ml) maple syrup, divided
  • 2 tbsp (30 ml) milk, divided
  • 1 tsp (5 ml) matcha powder (ceremonial grade)
  • 1 cup (250 ml) chopped fresh strawberries, divided
  • 2 eggs
  • 4 tsp (20 ml) butter
  • 1 tbsp (15 ml) icing sugar (optional)

Preparation

  1. Using a small blender or immersion blender, blend 1/4 cup (60 ml) cottage cheese, 2 tbsp (30 ml) maple syrup, 1 tbsp (15 ml) milk and matcha powder until smooth. Transfer to bowl and rinse out blender.
  2. Blend the remaining 1/4 cup (60 ml) cottage cheese, 1 tbsp (15 ml) maple syrup and 1/4 cup (60 ml) strawberries. Blend until smooth.
  3. In a bowl, whisk together eggs, remaining 1 tbsp (15 ml) milk and 2 tbsp (30 ml) maple syrup.
  4. In a medium skillet set over medium heat, melt 2 tsp (10 ml) butter. In batches, cover the bread slices in the egg mixture and cook in a skillet, flipping partway through, for 4 to 5 minutes or until bread is lightly golden and set in the centres. Transfer to plate. Repeat with the remaining butter and the remaining bread slices.
  5. Top 2 slices of French toast with both cottage cheese mixtures, and garnish with the remaining chopped strawberries. Dust with confectioners’ sugar, if desired.

Tips: Substitute strawberries with your choice of berries — raspberries, blackberries and blueberries all work well in this recipe.
If desired, substitute matcha powder with 2 tsp (10 ml) unsweetened cocoa powder for a chocolatey twist.
