Green Pea Soup with Curried Bread Slices

Ingredients
- 4 slices of Bon Matin® No Fat, No Sugar Added Protein Loaf
- 1/4 cup olive oil
- 1 tsp curry powder
- 3 tbsp plain yogurt
- 1/4 cup feta cheese, crumbled
- 1/4 cup green peas
- Some fresh mint leaves
- 1 onion, chopped
- 1 clove garlic
- 2 tbsp olive oil
- 4 cups vegetable broth
- 5 cups green peas
- 1/4 cup mint, chiselled
- Salt and pepper
Preparation
- Preheat oven to 400°F (205°C)
- Mix the oil and curry powder in a bowl
- Brush the bread slices with the mixture and grill them in the oven for 10 minutes
- In a saucepan, soften the onion for 2-3 minutes
- Add the garlic and cook for 1 minute.
- Add the vegetable broth and bring to a boil.
- Add the green peas and cook for 5 minutes. Add salt, pepper and mint.
- Pour everything into a blender and mix until creamy consistency.
- Serve in a bowl and top with bread slices, yogurt, feta cheese, green peas, mint leaves and olive oil.
