Beet Salad with Tomatoes and Croutons

Ingredients
- 2 slices of Bon Matin® La mie de l'artisan™ Country Grains Bread
- 4 tbsp Olive Oil
- 1 tsp Dried Herbs
- 1 clove Garlic, chopped
- 1 tbsp White Balsamic Vinegar
- 1/2 tsp Dijon Mustard
- 2 cups of Cherry Tomatoes, various colours and cut in half
- 2 Red and Yellow Tomatoes, sliced
- 2 Small Beets, cooked and sliced
- 1 French Shallot, chopped
- Some Fresh Basil Leaves
- 1/2 cup Crumbled Feta Cheese
- Salt and Pepper, to taste
Preparation
- Preheat the oven to 400 °F.
- Cut the bread slices into small cubes and mix them with 1 tbsp of olive oil and dried herbs. Put in the oven for 10 minutes. Set aside.
- Mix together the remaining olive oil, garlic, white balsamic vinegar, and dijon mustard. Set aside.
- In a serving dish, arrange tomatoes, beets, shallot, feta cheese, basil leaves and croutons. Add the dressing and salt and pepper.
