French Toast with Red Berry Compote

Ingredients
- 6 slices Bon Matin™ No Fat, No Sugar Added Seed Lovers Bread
- 1 pinch of cinnamon
- 2 eggs
- 2/3 cup (160 mL) milk
- 1 pinch nutmeg
- Butter for cooking
- 250 g of red berries
- 2 tbsp (30 mL) of maple syrup
Preparation
- In a saucepan, bring the red berries and maple syrup to a boil.
- Add a little bit of water if the compote sticks to the bottom of the saucepan.
- Simmer 15 minutes over medium heat, stirring.
- Mix the preparation and let it cool before serving.
- Beat the eggs and add the milk, cinnamon and nutmeg.
- Dip the bread in the egg mixture to coat it well.
- Heat the butter in a frying pan and brown the bread slices on both sides.
- Serve the French toast with the red berry compote and plain yogurt.
- Top with grated coconut and your choice of fruits.
