Ingredients

  • 4 slices Bon Matin™ La mie de l’artisan™ Oatmeal Bread
  • 1/4 cup (60 mL) of mayonnaise
  • 1/8 cup (30 mL) of spinach
  • 1 tbsp (15 mL) of mixed spices (basil, tarragon and chives)
  • 1 English cucumber
  • 2 cups of sprouts
  • 2 slices of Swiss cheese
  • 1 sliced avocado
  • Salt and pepper

Preparation

  1. In a food processor or using a hand blender, puree the mayonnaise, spinach and spice mix.
  2. Spread two bread slices with green mayonnaise.
  3. Place a slice of cheese on each bread slice.
  4. Add the sprouts and avocado.
  5. Cut the cucumber into thin strips with a peeler.
  6. Roll them up and place them on the avocado.
  7. Salt and pepper.
  8. Close the sandwiches with the two remaining bread slices.
