Almond-crusted Tuna Sandwich

This original sandwich takes only a few minutes to make and is simply delicious. Tuna tataki lovers will be delighted: the tuna is crispy on the outside and pink at the centre. Bon Matin Smooth Grains bread is a good source of fibre with 9 g per portion (2 slices). It is made with whole grains, contains no added sugar or fat, and is easy to use in the kitchen.

Ingredients

  • 8 slices Bon Matin™ Smooth Multigrain Bread
  • 1/4 cup (60 mL) mayonnaise
  • 4 green onions, finely chopped
  • 1 celery stalk, finely chopped
  • 3 tbsp (45 mL) Italian parsley, finely chopped
  • Salt and pepper to taste
  • 4 tuna steaks (about 400 g)
  • 2 tbsp (30 mL) canola oil
  • 3 eggs, lightly beaten
  • 1 cup (250 mL) thinly sliced almonds
  • 1 tbsp (15 mL) butter

Preparation

  1. Temper the tuna steaks. Prepare the mayonnaise. Set aside.
  2. Salt the tuna steaks. In a large non-stick skillet, quickly sear the tuna steaks in canola oil. Set aside.
  3. Dip one side of each slice of bread in the beaten egg mixture, then in the sliced almonds.
  4. In the same pan, melt the butter over low heat. Place the bread slices in the hot pan, almond side down. Brown lightly, then remove.
  5. Spread mayonnaise on the non-almond side of the bread. Assemble the sandwiches with the tuna steaks. Cut the sandwiches in half.
  6. Serve hot with a fresh salad or raw vegetables.
