Toast with Whipped Ricotta

Ricotta is suitable for both sweet and savoury recipes. Its light taste stands out every time. In the shadow of its rivals (cottage cheese, sour cream, or Greek yogurt), ricotta often goes unnoticed and is used very little in cooking. However, it can be prepared in various ways and one of them is to whip it with a little honey and spices. This preparation can easily replace mayonnaise in a recipe. Here is a delicious recipe for toast with whipped ricotta and slow-roasted tomatoes.

  • 4 slices of Bon Matin™ La mie BIO™ Quinoa and Sunflower Seeds Bread
  • 20 fresh basil leaves
  • 1/4 cup sunflower seeds
  • 300 g cherry tomatoes
  • 1 tbsp olive oil
  • 1 tbsp honey
  • 1/4 tsp salt
  • 1 cup ricotta cheese
  • 2 tbsp fresh lemon juice
  • 1 tbsp olive oil
  • 1 tsp honey
  • 1 clove of finely chopped garlic
  • Dried oregano, to taste
  • Ground pepper and fleur de sel to taste


  1. Preheat oven to 190°C (375°F).
  2. Mix cherry tomatoes, olive oil, honey, and salt. Place everything on a baking sheet lined with parchment paper and bake until the tomatoes are well roasted, about 40 minutes.
  3. Meanwhile, in a large bowl, using an electric mixer, mix all the ingredients for the whipped ricotta until a smooth texture is obtained.
  4. Spread whipped ricotta on each slice of Bon Matin™ La mie BIO™ Quinoa & Sunflower Seeds Bread.
  5. Once the cherry tomatoes are roasted, mix them directly with the fresh basil. Spread over the toast and add the sunflower seeds.
