Strawberry, watermelon, and cucumber salad with fresh herb croutons

This fruit and vegetable salad made with Bon MatinTM smooth grain bread is bursting with freshness.

Ingredients

  • Croutons:
  • 4 slices Bon MatinTM smooth grain bread
  • 2 tbsp (30 mL) olive oil
  • 1/4 cup chives, dill, thyme, freshly chopped
  • 1 tbsp (15 mL) grated parmesan cheese
  • Salad:
  • 2 cups arugula
  • 1 cup strawberries, sliced
  • 1 cup watermelon, cut into cubes
  • 1 cup cucumbers, sliced
  • 3 tbsp (45 mL) fresh mint, chopped
  • 3 tbsp (45 mL) pecans, in pieces
  • 1/4 cup feta cheese, crumbled
  • Dressing:
  • 1/4 cup olive oil
  • 2 tbsp (30 mL) rice vinegar
  • 1 tsp (5 mL) maple syrup
  • 1 clove of garlic
  • 1/2 tsp (2.5 mL) Dijon mustard

Directions

  1. Croutons:
  2. 1. Preheat BBQ to 425 °F
  3. 2. Mix oil with herbs and cheese and brush it on bread slices
  4. 3. Then cut the slices into cubes
  5. 4. Place on a baking sheet and bake in the oven for 10 to 15 minutes *watch often so they don't burn and set aside
  6. Dressing:
  7. 1. Combine all ingredients and mix well with a small whisk
  8. 2. In a large bowl, toss all salad ingredients together with dressing and serve with herb croutons
