Salsa Fresca Toast

Have you heard of salsa fresca – also called pico de gallo? It is similar to traditional salsa, as both options are mainly made up of the same ingredients. However, their methods of preparation differ. Salsa fresca is prepared exclusively from raw foods! It is, therefore, less liquid than traditional commercial salsa and offers a more interesting texture in the mouth. It is the star of this breakfast-toast that will stand out at your next brunches.

  • 4 slices of Bon Matin™ La mie BIO™ 100% Whole Grain Bread
  • 1 tbsp canola oil
  • 4 eggs, large size
  • 2 avocados, pitted, peeled, and thinly sliced
  • Coriander microgreens, to taste
  • 1 cup red tomato, seeded, cut into small pieces (about 2 large tomatoes)
  • ½ cup white onion, finely chopped
  • 1/3 cup fresh coriander
  • 1/2 jalapeño pepper, seeded and finely chopped
  • 2 tbsp fresh lime juice
  • Salt and pepper, to taste


  1. Mix all the ingredients for salsa fresca. Set aside.
  2. In a frying pan, over medium heat, heat the canola oil. Break the eggs in the pan and cook for 4 to 5 minutes, until the white is set, but the yolk is still runny.
  3. Meanwhile, toast the slices of Bon Matin™ La mie BIO™ 100% Whole Grain Bread.
  4. To assemble the toast, place 1/2 sliced avocado on each of the slices of bread. Then add 1/2 cup of salsa fresca and a sunny side up egg. Season and garnish with a few microgreens of coriander and serve.
