Lemon & Herb Hummus Tartine with Cucumber and Radishes

Ingredients

  • 2 slices Bon Matin La mie de l'artisanMC 12 Grains bread
  • 1/4 cup (60 mL) Prepared hummus
  • 1 Tbsp (15 mL) Chopped tarragon
  • 1 Tbsp (15 mL) Minced chives
  • 2 tsp (10 mL) Lemon Zest
  • 1 tbsp (15 mL) Lemon juice
  • Pinch Each coarse salt and fresh cracked pepper
  • 8 Slices Each, cucumber and radishes
  • 1/4 cup (60 mL) Micro sprouts
  • 2 tsp (10 mL) Extra virgin olive oil

Directions

  1. TOAST or grill bread slices.
  2. STIR together hummus, tarragon, chives and lemon zest and juice, salt and pepper until well combined.
  3. DIVIDE hummus mixture over each slice of toast.
  4. TOP with cucumber and radish slices.
  5. SPRINKLE with a little more salt, pepper and the micro greens. Drizzle with olive oil and serve.
  6. TIP: Replace the cucumber and radishes with various toppings for a different twist.
