Hot and Smokey Sicilian Sandwich
- 2 Slices Rustic Grains Bon Matin Bread, lightly toasted
- 2 tbsp (30 mL) Chipotle mayonnaise
- 8 Slices Capocollo and/or salami
- 1 Slice spicy Havarti cheese
- 1/2 Roasted red pepper, cut into strips
- 1/4 cup (60 mL) Baby spinach leaves
- CHIPOTLE MAYONNAISE:
- 1 cup (250 mL) Mayonnaise
- 1 Clove garlic, minced
- 1/2 tsp (2 mL) Horseradish
- 1 Chipotle in adobo sauce, finely chopped
- 2 tsp (10 mL) Lemon juice
- Salt and pepper
- WHISK together all of the ingredients for the chipotle mayonnaise.
- SPREAD each slice of bread with chipotle mayonnaise.
- TOP one slice with meat slices, cheese, peppers, spinach and the remaining slice of bread.
