Ingredients

  • 3 slices of Bon Matin™ La mie BIO™ 100% Whole Grain Bread
  • 2 tbsp olive oil
  • Dried herbs of your choice
  • 2 small zucchinis cut into ribbons
  • 1 tbsp olive oil
  • 1 clove garlic, chopped
  • 1 tsp lemon juice
  • 1 tsp lemon zest
  • 1/2 cup crumbled goat cheese
  • A few chopped mint leaves
  • Sliced roasted almonds
  • Salt and pepper

Preparation

  1. Mix the zucchini ribbons with the olive oil, garlic, lemon juice and lemon zest and let marinate for 10 minutes.
  2. Cut the slices of bread into four squares.
  3. Brush each square with olive oil and a pinch of dried herbs.
  4. Brown in the oven for 10 minutes at 400°F.
  5. Spread the goat cheese, mint leaves and almonds on the squares, then add the zucchini ribbons.
