Energy Bowl with Green Vegetables and Curried Croutons

Ingredients

  • 2 slices of 22 Grains and seeds Bon Matin™ La mie BIO™ Bread
  • 1/2 tsp curry powder
  • 2 tbsp olive oil
  • Pinch of salt
  • 1 cup baby spinach
  • 1 cup blanched edamame
  • 1 cup blanched broccoli
  • 1 cup chickpeas, rinsed and drained
  • 2 Lebanese cucumbers, sliced into ribbons
  • 1 avocado, sliced
  • A few coriander leaves
  • A few mint leaves
  • Some green shoots
  • 1/4 cup tahini
  • 1 clove garlic, chopped
  • 2 tbsp lemon juice
  • 2 tbsp maple syrup
  • 1 tbsp canola oil
  • 1/2 tsp salt
  • 1/3 cup water

Preparation

  1. Preheat oven to 400°F.
  2. Mix the olive oil, curry powder and salt and brush this mixture on the bread slices.
  3. Bake for 10 minutes until lightly toasted.
  4. In a bowl, combine all the ingredients for the dressing. Set aside.
  5. In another bowl, add all the salad ingredients, then add the dressing and toast slices.
