Beet Salad with Tomatoes and Croutons

Ingredients

  • 2 slices of Bon Matin® La mie de l'artisan™ Country Grains Bread
  • 4 tbsp Olive Oil
  • 1 tsp Dried Herbs
  • 1 clove Garlic, chopped
  • 1 tbsp White Balsamic Vinegar
  • 1/2 tsp Dijon Mustard
  • 2 cups of Cherry Tomatoes, various colours and cut in half
  • 2 Red and Yellow Tomatoes, sliced
  • 2 Small Beets, cooked and sliced
  • 1 French Shallot, chopped
  • Some Fresh Basil Leaves
  • 1/2 cup Crumbled Feta Cheese
  • Salt and Pepper, to taste

Preparation

  1. Preheat the oven to 400 °F.
  2. Cut the bread slices into small cubes and mix them with 1 tbsp of olive oil and dried herbs. Put in the oven for 10 minutes. Set aside.
  3. Mix together the remaining olive oil, garlic, white balsamic vinegar, and dijon mustard. Set aside.
  4. In a serving dish, arrange tomatoes, beets, shallot, feta cheese, basil leaves and croutons. Add the dressing and salt and pepper.
