Avocado Toast with Goat Cheese

Ingredients

  • 2 slices of Bon Matin™ La mie BIO™ 100% Whole Grain Bread
  • 1 avocado
  • 1/2 cup creamy goat cheese
  • 1 tsp olive oil
  • 1 tsp lemon juice
  • 1 tsp lemon zest
  • 1 tbsp pomegranate seeds
  • A few chives, chopped
  • Microgreens of your choice

Preparation

  1. In a small bowl, mix the goat cheese with the olive oil, lemon juice and lemon zest
  2. Peel and cut the avocado into thin slices
  3. Toast the slices of bread in the toaster
  4. Divide the goat cheese preparation and spread on each slice of bread
  5. Add the avocado slices, pomegranate seeds, chives, and microgreens
  6. Drizzle with oil. Add salt and pepper to taste.
